In 2013, the Lang Family purchased a picturesque piece of Central Texas land in a small community they had never heard of - Gause, Texas. Having four Junior and Senior High school aged children, the property was meant to be a weekend, hunting getaway from the hustle and bustle of Houston suburbia. What they did not expect, was to fall in love with their daughter’s Heritage Hereford show calves and the farming lifestyle. What started out as three, is now a herd of over fifty registered Hereford Cattle.
Vernon and Melissa are now living full time on their ranch and pouring their hearts and souls into improving the eco-system that God has blessed them with. Richer soils, greener pastures, and healthier, happier livestock is what it is all about! Everyday they are educating themselves and implementing sustainable farming methods in order to heal the land.
4C Market welcomes you to be a part of this adventure by purchasing high quality, pasture raised meats, eggs and dairy products. Vernon and Melissa also love to cook! Vernon is a true Texan pit master and Melissa is a hometown Cajun girl. When you visit the Market, you will find samples of their culinary gems waiting for you in the kitchen. From a simmering pot of gumbo, to freshly baked breads and mouthwatering sweets, there is something to please every palette, from our farm to your table!
HERITAGE HEREFORD BEEF
These cattle are the size of the original Herefords that came from England. They generally weigh one third less than than their full sized commercial counterparts of today, producing more tender and healthier portioned cuts of beef. All of our cattle are raised and finished on our ranch in the most healthy and ethical way possible. They go directly from the pasture to a local processor where the carcass is dry aged for three weeks for optimal flavor and tenderness.
PASTURED PORK
Yes, pigs eat grass and pretty much anything else they find! They are nature’s cultivators of the land and with the help of modern technology, we are learning how to utilize their skills of tilling, thinning brush, and aerating compost which results in BACON!

PASTURED CHICKEN
We raise dual purpose chickens, meaning they are producers of both eggs and meat. We offer two types of whole birds, young roosters that are suitable for BBQ and roasting and also older hens who are past their laying prime which can be used for soups and stews. These are not commercial broilers with oversized breast meat. They are heritage breeds with strong bones and dark flavorful meat.
PASTURED EGGS
Lovingly given to us by our dual purpose, heritage breed hens. These birds follow our cattle around the pasture, scratching and pecking the ground for bugs and grass. Hens raised on pasture provide us with nutritionally and ethically superior eggs. The taste, texture, and color are immediately apparent.
Raw A2 Guernsey Dairy Products
You can join our Farm Share Association and purchase the healthiest of all milk, Guernsey Gold. Besides milk, you may find cultured butter, tangy Bulgarian yogurt, and fresh mozzarella cheese waiting in the fridge.
Cajun Boudin
Flavorful and authentic pork and rice sausage, made by our family from down the bayou!
Local Seasonal Produce
Though we haven’t mastered gardening here at the ranch, we offer fresh vegetables from other local farmers. You never know what you’ll find!
